Last night I attended a media preview at the California Pizza Kitchen in Atlantic Station. At the tasting we tried the newest five items to join the California Pizza Kitchen menu. The new options are light in calories and they are delicious. New items include a quinoa and arugula salad, shrimp scampi zucchini fettuccine, grilled chicken chimichurri, fire-roasted chile relleno and a cedar plank salmon.

Quinoa and Arugula Salad- Super- grain salad with asparagus, sun- dried tomatoes, red onions, toasted pine nuts and Feta tossed in a housemade Champagne vinaigrette. (Really light, quite refreshing)
Shrimp Scampi Zucchini Fettuccine- sauteed with lemons, garlic and white wine tossed with zucchini ribbons, fettuccine, parsley and Parmesan. (light but makes you full)
The Fire Roasted Chile Relleno- Spicy poblano stuffed chicken, cheese, corn & black bean salsa, wild muschrooms, spinach and eggplant. Topped with housemade avocado salsa verde and cilantro. (This dish had a comfort food feeling)
Grilled Chicken Chimichurri- Marinated grilled chicken breast with pan- roasted vegetables and a housemade Argentinean inspired chimichurri sauce.- (spicy, but delicious!)
Cedar Plank Salmon- Served with white corn and spinach succotash topped with Feta.
